Meet Chef Everton Clarke, Executive Chef - Westin Houston Memorial City
When you grow up on a farm in New England that produces a variety of wild game bird, goats, cows, root vegetables, and fruit, you become accustomed to enjoying food at its very best.
So it will come as no surprise that as a chef, Everton Clarke has been subconsciously imprinted to access the best regionally-sourced ingredients he can find wherever his job may take him. The prime beneficiaries of that dedication.
Chef Clarke’s cuisine at The Westin Houston Memorial City brings a fresh California approach to Houston dining, while at the same time using local products to produce such items as Braised Ox Tail Putin, Guinness Braised Short Rib and incorporating local artisan beers in his cuisine.
Chef Clarke draws his inspiration for his Westin Houston Memorial City menus from his 25 years of experience with Marriott Hotels and Resorts, including most recently serving as Executive Sous Chef of Banqueting at the JW Marriott Marquis Dubai Hotel.
As a young chef, Clarke worked in family restaurants along the eastern part of the U.S. including the Michael Mina’s Arcadia Steakhouse at the San Jose Marriott in California, before joining the San Francisco Marriott Moscone Marquis hotel in 2007. Chef Clarke attended culinary school and received a Bachelor of Science in Food Service Management from Johnson and Wales University.
Before moving to Houston, Chef Clarke was integral in the opening of the first JW Marriott in Minnesota. He also worked at the Philadelphia Marriott Downtown, Fort Lauderdale Marriott Harbor Beach Resort & Spa, San Francisco Marriott Marquis, JW Marriott Desert Springs and as Executive Chef at the Arcadia steakhouse and Tanq Bar inside the San Jose Marriott. A father of two girls, he cooks at home at least three to four times a week for his family. His own preferences? Meats that are closer to the bone like braised oxtail, pot roast, short ribs and liver – meals he can slow cook with potatoes and other root vegetables.
